Hi I’m Jennifer and I live in a rural area of Tennessee. I love to cook, and over the years have dabbled in a lot of vegetarian and vegan dishes. I decided to adopt a vegetarian diet many years ago after my mom died of a heart attack at the age of 57. I was only in my 30s at the time, and I decided I wanted to make sure I had a really healthy diet to avoid a similar fate. Unfortunately, this was in the very early years of the internet, before YouTube and social media, and I really had no idea what I was doing. I cut out meat, but replaced it with unhealthy choices, like pasta. I ended up with a vitamin B deficiency. I started eating meat again.

I found some amazing vegan recipe developers, some fantastic YouTube pages, and some cookbooks with recipes that are so much tastier than anything I ever made with meat. I started to really enjoy experimenting with plant based recipes, even starting to dabble in plant based cheese. Then I found out my blood sugar was getting too high. WHAT.

After an absurd amount of research on YouTube, I decided to try a low carb diet. At first, I thought I’d have to go back to a meat-based diet, but I’ve figured out how to eat a low carb plant based diet. My blood sugar is back to normal and I lost all of the weight I gained when I started menopause. Win win!
Eating a healthy plant based diet, plus low carb, is tricky. It’s hard to get started cutting out meat. Now that it’s 2025 and eggs are a scarce resource, bird flu is contaminating dairy, and everything is more expensive, I decided to start this site to help others not only learn how to eat healthier, but to save money.
My Mission
I help others learn how to cook delicious, inexpensive, nutritious, and easy food. I write blog posts highlighting my favorite recipes, provide information about how to make sure you get enough of the nutrition you need from your meals, and I’m figuring out how to teach in-person cooking classes! Learning how to transition from diets that may be heavy in meats, processed foods, and lots of sugary treats can be really difficult. But luckily, with the right resources, you can learn the skills you need to change your eating habits.
In addition, my resources are NON JUDGEY. A lot of vegan resources can make you feel bad. I will never do that. I will cheer you on if you switch even a couple of meals a week to healthier plant based options!
