I’m planning to teach some in person plant based cooking courses starting in 2025. I need to find a location! If you’re interested in classes, let me know what you want to learn! Some of the classes I’m thinking about include the following:
Cooking with Tofu: Tofu is a staple of plant based diets, but learning how to cook with it is not obvious. I’ll teach you how to make all sorts of delicious things with tofu, from mock chicken nuggets to creamy chocolate desserts.
Egg and Dairy Replacements: Eggs are SO expensive right now. I’ll teach you how to make “scrambled eggs” from tofu that no joke taste just like eggs. We’ll also learn how to make plant based milks. It’s SO easy and SO much cheaper than store-bought plant milks.
Baking Without Eggs: Learn how to make some delicious desserts that are low sugar, healthy, and no milk or eggs! Some of the recipes we’ll try are chocolate brownies, cheesecake make with cashews, and a variety of muffins.
The Low Carb Plant Based Diet: If you’re like me and need to watch your carbs (I’m watching my blood sugar) you need to think a bit about what types of plant based foods you eat to make sure you don’t eat too many high glycemic index carbs. We’ll go over the nutrition basics of carbs and why you might want to limit them, then go over healthy low carb options that are plant based.
Cooking with Seitan: Seitan is made from flour and it’s surprisingly easy to make at home. It’s really high in protein and low in carbs and makes an excellent meat replacement. You can find seitan at the store, but it’s expensive and also has lots of extra ingredients you may not want. We’ll learn how to make seitan from a cheap bag of flour, then how to cook it to mimic meat. Seitan is high in gluten so this isn’t appropriate for people who are sensitive to gluten.
Making Plant Based Cheese: We’ll learn how to make cheese sauce, cream cheese, and cheese spread from plants! And they really do taste like cheese!
